Try getting them to follow again, and draw your weapon. That may get them to re-equip gifted gear. If you are playing on PC, then there are follower mods that you can use which will allow you to access your follower's inventory to remove their default armor. I use UFO (Ultimate Follower Overhaul) to do that.
